Each colour has its own unique flavour: green, it is anise, lemon yellow, raspberry pink, cherry fuchsia ... Its manufacture is entirely artisanal and manual. Rolled and lying in ribbon, it is cut with the "berlingotière", a machine from the end of the 19th century, which imitates cutting with scissors.
Prepared exclusively with cane sugar, they are cooked in cauldron as in the past.
